Health, Sustainability and Ethics in Catering - with Andrew Etherington

Andrew is a 50 year veteran of the UK catering industry. In this episode he talks about the role of catering in addressing the obesity crisis in the UK, the  challenges of delivering fresh food in schools and hospitals, the successes of the School Food Trust and the Universal Infant Free School Meals programme, and the many reasons we need to source food ethically. He explains his role as a Restaurant Ambassador for The Clink Restaurant and how the restaurant has helped prisoners gain experience and qualifications while incarcerated, then supported them to find work when they are released. Andrew gives us his thoughts on finding talent and how the industry will need to change its approach to training to meet staffing challenges post-Brexit. Finally, Andrew shares the hardest experience of his career and how he rebuilt himself in the wake of it to get where he is today - his message is that things are never as dark as they seem, you should never be afraid to ask for help and that there is always reason to hope.
